The founder of the Warszawa-Jerozolima Restaurant, Mr. Ehud Brunicki, was born in Warsaw, but lived abroad since childhood. His dream was to found in his native city a place that would make Warsaw a little closer to Jerusalem. He wanted to remind the citizens of Warsaw about the old days when delicious dishes of Jewish cuisine were very popular in the city.
For centuries Jews moved from country to country bringing their culinary traditions with them and adopting them to new conditions and enriching the dishes that they already knew. That's why Jewish cuisine is very multifarious. There are two main regions of Jews settlements, so it's possible to distinguish two ways of Jews culinary. The Israeli cuisine preserves cooking traditions of the people living broadly from the Mediterranean to the Near East and Middle East. The roots of traditional Jewish cuisine are in France, Germany and Eastern Europe.
The chefs of Jewish cuisine prefer straightforward seasonings that emphasize the inherent tastes of foods rather than a large number of herbs and spices. Different soups, roast chickens, potato pancakes and noodle casseroles are popular Jewish dishes. Sweet and sour stews of meat and vegetables are other features of the Jewish cuisine. Perhaps the most famous example is "tzimmes", a stew of sweet vegetables such as carrots and sweet potatoes, dried fruits such as prunes or apricots, and often beef. To create the sweet and sour effect, cooks use sugar, honey, or raisins tempered with vinegar or lemon juice. Dill, bay leaves, parsley, chives, black pepper, both mild and hot paprika are the preferred spices of the Jewish chefs. The food is tasty and not usually spicy.
The Israeli cuisine is similar to the Middle Eastern cuisine with its falafel, hummus, shawarma and other delicious dishes. Israeli cuisine is not only tasty, but very healthful too.
The visitors of the Warszawa-Jerozolima restaurant are welcome to try dishes of both Israeli and Jewish cuisines. Unusual feature of the restaurant are the singing waiters. All the waiters of the Warszawa-Jerozolima are good vocalists, and from time to time they entertain the visitors with professional presentation of the songs in English, Polish and Hebrew. The band plays for the guests to dance, and karaoke equipment is at your disposal.
